Toast two slices of raisin bread. Mix cream cheese with honey and spread on one slice. Place thinly sliced apples on top. Cover with second slice of bread and cut in half. This is a small sandwich so make two if you wish.

Place greens in your container and top with a cut up tomato. Mix drained chickpeas with salt and pepper. Top greens with chickpeas, thinly sliced red onion and feta. Place 2 lemon wedges on top so you can squeeze it onto the salad at lunch. There is no need for a dressing since the feta is salty and the tomatoes and lemon provide juice and acidity.

Sometimes I like to eat lots of little things instead of a big sandwich or salad.

Pack multi grain crackers, sliced meat and cheese, olives and cherry tomatoes separately in small containers or snack bags. Your mouth will thank you for putting in everything it craves!

If any of the meals are too small for you, bring along a banana or whatever fruit you like. I find bananas are filling, sweet and affordable making it the perfect side.

Bring a Thermos with water to keep you hydrated. They come in all different colors, they’re reusable, lightweight and last a long time. I think a 16 ounce thermos is a good size for lunch. I’ve put the link for the thermos and lunch containers on this page.
